Tandoori and Massala Khazana

A Tandoor is an oven made from Indian Clay. This simple artefact is used for many things, such as baking bread and roasting lamd and Chicken. All Tandoori dishes are first marinated in yoghurt together with a special blend of herbs and spices. The Tandoor is kept at a high temperature with charcoal which heats the walls. The heat that is radiated together with smouldering charcoal also lends the foods special flavour. A massala is gently cooked with a special tandoori sauce to give it a special rich flavour.
